01 - Combine olive oil, minced garlic, salt, pepper, smoked paprika, Italian herbs, and lemon zest in a large bowl. Mix thoroughly until well incorporated.
02 - Add shrimp to the bowl and toss to coat evenly. Allow to marinate for 5 minutes at room temperature.
03 - Sprinkle grated Parmesan and chopped parsley over the marinated shrimp. Toss again to ensure even coating.
04 - Preheat air fryer to 400°F for 2 minutes before cooking.
05 - Place shrimp in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
06 - Cook for 6-8 minutes, shaking basket or turning shrimp halfway through cooking. Shrimp are done when opaque and lightly golden.
07 - Transfer cooked shrimp to a serving plate. Garnish with additional fresh parsley and accompany with lemon wedges.
