01 - Preheat oven to 350°F. Line a 12-cup muffin tray with paper liners or grease lightly.
02 - In a large bowl, whisk mashed bananas, eggs, melted coconut oil or butter, honey or maple syrup, and vanilla extract until smooth and well combined.
03 - In a separate bowl, mix rolled oats, flour, baking soda, baking powder, cinnamon, and salt until evenly distributed.
04 - Add dry ingredients to wet ingredients. Stir gently until just combined, being careful not to overmix.
05 - Fold in chopped nuts or chocolate chips if desired.
06 - Divide batter evenly among muffin cups, filling each approximately 3/4 full.
07 - Bake for 18 to 22 minutes until a toothpick inserted into the center comes out clean.
08 - Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
