# What You'll Need:

→ Vegetables

01 - 1 ½ cups fresh or frozen lima beans
02 - 2 cups fresh or frozen corn kernels
03 - 1 small red bell pepper, diced
04 - 1 small zucchini, diced
05 - ½ small red onion, finely chopped
06 - 2 cloves garlic, minced

→ Fats & Seasoning

07 - 2 tablespoons unsalted butter
08 - 1 tablespoon olive oil
09 - ½ teaspoon kosher salt
10 - ¼ teaspoon freshly ground black pepper
11 - ¼ teaspoon smoked paprika

→ Fresh Herbs

12 - 2 tablespoons chopped fresh parsley
13 - 1 tablespoon chopped fresh basil

# How To Make It:

01 - If using fresh lima beans, blanch them in boiling salted water for 2–3 minutes until just tender. Drain and set aside. Frozen beans can be added directly during cooking.
02 - In a large skillet, heat butter and olive oil over medium heat until melted and shimmering.
03 - Add red onion and garlic to the skillet. Sauté for 2 minutes until softened and fragrant, being careful not to burn the garlic.
04 - Stir in red bell pepper and zucchini. Cook for 3–4 minutes, stirring occasionally, until vegetables begin to soften.
05 - Add lima beans and corn to the skillet. Season with salt, pepper, and smoked paprika. Toss everything together to combine evenly.
06 - Cook, stirring gently, for 6–8 minutes until all vegetables are tender but still retain a slight crunch. Taste and adjust seasoning if necessary.
07 - Remove from heat. Stir in chopped parsley and basil until evenly distributed. Serve warm as a side dish or vegetarian main.

# Expert Suggestions:

01 -
  • The butter and smoked paprika create this incredible depth that makes people think you spent way more time on it than you actually did
  • Everything cooks in one skillet and comes together in under 20 minutes once your veggies are prepped
02 -
  • Do not crowd the skillet or your vegetables will steam instead of developing those nice caramelized edges
  • Taste a lima bean before you add the corn, as fresh beans sometimes need a touch more salt than you expect
03 -
  • Pat your vegetables dry with paper towels before adding them to the skillet, especially if you thawed frozen corn
  • Let the pan get properly hot before adding anything, and give each addition time to start cooking before you stir
